Later that night... a little giggle fest!


I don't remember which day this was, but we headed over to the West End via water taxi and had some delicious Thai food - random, I know, but where everyone told us to eat.

We had to cool off in the amazing water ~ just a running jump off the pier!

On our second to last day, we decided to go deep sea fishing - here we are on the boat at 6:00 AM for a 4 hour tour!

The trip was very, very slow... we were all afraid that we weren't going to catch anything - then with about an hour to go, we hit the jackpot! A school of rainbow runners!

You can see the rainbow of blue, yellow, and white - it almost has a reflector quality as they come to the surface. Really cool...

We caught 4 rainbow runners and 1 tuna - not a bad haul! I decided to take the fresh fish back to our condo and cook it up for dinner. Of course we didn't need it all, so we let our captain take some home and then we shared some with our neighbors - delish!

Our last sunset - this was about an hour before Jeff lost his wedding ring. Krystle and I had gone up to start cooking the fish and the next thing I know, Tyrrell came knocking on the door with the bad news. So, I headed down to the water to find Jeff and all I saw was his feet. The sun was down, he didn't have a flashlight, no goggles - no way he would find it! So, I finally convinced him to give it up... it wasn't an heirloom, we could get another ring...

The next morning, we were packing things up and Jeff decided to take one more look in the water. I finished packing up a bit then decided that I might as well go look too - that way I can say we both tried. The beach does not have a lot of wave action, so we were hopeful that it wouldn't be covered with sand. Jeff was searching around where he could see his foot prints from the night before and I decided to start closer to the shore and look from side to side.
I swam along picking up trash and whatnot - what else did I have to do?!? Finally, I saw something shinny - I thought it was a big bottle cap and went to pick up the "trash". To my shock, it was JEFF'S RING! Can you believe it? What an ending to an amazing trip! That has got to be a great sign!
So, we said goodbye to our beautiful
Infinity Bay Resort with plans to return! Amazing snorkeling just off the beach, nice people, and amazing views everywhere. If you are looking for an easy get away to tropical paradise, check out Roatan!
